Parsley
Sauce for Fish
Basic white sauce:
1 1/2 oz butter
4 tablespoon flour
3 cup milk
Salt
White pepper
Melt butter over low heat.
Add flour and cook 2 min, stirring constantly.
Pour in milk slowly, stirring.
Season to taste and simmer gently for 10-15 min, occasionally
stirring.
Parsley sauce:
To above, add 1/2 cup chicken stock.
Juice of 1 lemon
4 tablespoon finely chopped parsley
Salt white pepper
