INGREDIENTS
12 oz white flour
1/4 teaspoon salt
2 teaspoon baking powder
Nutmeg
1/4 teaspoon mixed spice
6oz butter or margarine
6oz soft brown sugar
3oz currants
1oz chopped peel
1 egg
1-2 tablespoon milk
Preheat oven to 375
DIRECTIONS
Mix flour, salt, baking powder and sugar in a bowl.
Add spices and run in butter/margarine until mix looks like fine
breadcrumbs.
Stir in fruit.
Break egg in a separate bowl and whisk lightly.
Add to flour mix.
Stir until mix forms a stiff dough (you may need to add a tablespoon
of milk, though no more than 2).
Using two forks, pile mix in heaps on greased baking sheets.
Bake for 20-25 min.
Idaho variation: use huckleberries instead of currants.
