5-Star Mother’s Day Brunch to Make at Home

My favorite brunch is very easy to put together, and is perfect for a special occasion such as Mother’s Day. There are no crowds, no lines, no reservations to contend with, and no enormous check to divvy up among the kids. Dress up the table with flowers, real china and linens, play some piano or harp music in the background, and your Mom will think she’s having a 5-Star Mother’s Day brunch experience.

Here’s the menu and instructions for your 5-Star Mother’s Day brunch at home. It’s a great menu to include in your family cookbook. Feel free to improvise with your Mom’s favorite tastes, as desired:

SUNNY EGGS
A one-dish breakfast casserole that is great any time.

1 dozen eggs
1-2 cups whipped cream
2 cups shredded Swiss cheese
2 cups cooked breakfast meat: ham, sliced bacon, Canadian bacon, sausage (your choice)
Salt & pepper
½ cup grated parmesan cheese
1 teaspoon paprika
Pinch cayenne pepper
Chopped fresh parsley

Spray oblong glass baking dish with cooking spray. Place meat evenly on bottom of dish. Sprinkle Swiss cheese evenly over meat. Make small “nests” in the cheese and break eggs one at a time into the indentations. Whisk the cayenne, salt and pepper into the whipped cream, and then pour mixture over the eggs (eggs should just peek through the whipped cream). Bake at 400 degrees for 20-30 minutes until eggs are set (not jiggly). Remove and sprinkle with fresh parsley. Let stand a few minutes before cutting into portions and serving.

BROILED PEACHES
A wonderful accompaniment for the Sunny Egg dish.

Canned peach halves, drained
Brown sugar
Strawberry jam
Mixed salad greens

Drain canned peach halves (save the juice for the Mimosas). Blot dry on top. Dip halves in brown sugar and place on broiler pan. Broil peaches until the sugar caramelizes and peaches are nicely browned. Add a dollop of strawberry jam to middle of peaches. Place salad greens garnish on plate with a broiled peach half on top. Add Sunny Eggs portion to plate and serve.

APRICOT MUFFIN SURPRISE
These are hard to resist, but you can substitute English muffins or croissants if you wish.

Muffin mix, any flavor
Dried apricots, chopped
Cream cheese

Prepare the box of muffin mix according to package directions. Spray muffin tin with cooking spray. Fill muffin cups one third full, then spoon 1 tablespoon of chopped apricots and one heaping teaspoon of cream cheese in the middle. Fill balance of muffin cup with batter, and bake according to package directions.  Yummy.

MIMOSAS /OR KIR ROYALES
A little festive touch for a special occasion.

Mimosa: Champagne and peach (or orange) juice with a fresh strawberry.
Kir Royale: Champagne and crème de cassis with a fresh strawberry.

Champagne flutes
Champagne
Peach juice or orange juice (if making Mimosas)
Crème de cassis (if making Kir Royales)
Fresh strawberry garnish

Pour peach or orange juice (or crème de cassis) in bottom of champagne flute. Fill with champagne and garnish with strawberry.

Your Mom will be delighted that you took the time to prepare a special 5-Star Mother’s Day brunch just for her (even though it is very easy). Don’t forget the cards, flowers, candy or other gifts your Mom deserves (that is, if you didn’t make her a family cookbook for Mother’s Day).
