Sugar Free Eggnog: Great Way for Diabetics to Enjoy Holiday Cheer

Went to a Christmas dessert party on Saturday and was quite impressed by the variety of holiday desserts that were brought to the festivities. Among the most popular holiday dessert drink was a clever eggless, diabetic version of eggnog, which is usually very thick and very sweet. This sugar free eggnog was great way for diabetics (and others) to enjoy holiday cheer without the guilt or worry about blood sugar levels going off the chart.

Oddly enough, the person who brought the sugar free eggnog was not a diabetic, just someone who prefers a lighter, less sweet version of a favorite holiday dessert drink.

The main ingredient of sugar free eggnog is a sugar-free vanilla pudding mixed with skim milk. In the right proportion, the result is quite good and an excellent substitute for the “real” thing.

SUGAR-FREE EGGLESS EGGNOG
Serves 10-12
11 cups cold skim milk
2 teaspoons vanilla extract (rum extract optional)
2 (1 1/2 ounce) packages sugar-free instant vanilla pudding mix *
1/2 teaspoon ground nutmeg
1/2 teaspoon cinnamon
1/3 cup Splenda granular (or artificial sweetener equivalent to 1/3-cup sugar), or to taste

In a large bowl, combine the milk and vanilla. In another bowl, combine dry pudding mix, nutmeg, and cinnamon. Whisk into milk mixture until smooth. Add more milk if thickens too much. After sampling, add sweetener to taste. Refrigerate until served, but check every so often to make sure the sugar-free eggnog stays “liquid.” Stir and spike with favorite alcoholic spirit, if desired, and a dust of nutmeg.

When served cold with a bit of nutmeg on top, this diabetic sugar-free eggnog reminds me of the old fashioned Brandy Alexander recipe in my family cookbook. Yum!
