Pau
Bhaji Masala Indian Curry
INGREDIENTS
For bhaji:
3 tablespoon vegetable oil
Med onion chopped finely
4 tablespoon pau bhaji masala powder (ask for at Asian grocer)
250 grams chopped tomato
350 grams potato (boil, peel and cut in pieces)
75 grams green peas (boil)
100 grams cauliflower (wash, boil and chop)
75 grams capsicum (wash, deseed and chop finely)
30 grams butter
Salt to taste
2 tablespoon coriander leaves chopped
100 ml water
For bread:
8 buns
30 grams butter
DIRECTIONS
Heat oil in heavy griddle on medium.
Sauté onions until they begin to discolor.
Add in pau bhaji masala and stir fry for 1 min.
Add in 100 ml water, tomatoes.
Mash and cook till well blended.
Add boiled vegetables, salt and butter.
Mash and cook for 10 min on medium low heat until veggies are
well blended.
Add remaining water to attain thick and smooth consistency.
Garnish with coriander leaves.
Apply butter on bun halves.
Place on griddle and grill lightly.
