Lemon-Dill
Fried Bass
INGREDIENTS
2lb bass filets
2/3 cup lemon juice
3/4 cup self-rising flour
3/4 cup self rising cornmeal
1 teaspoon dill weed
1/4 teaspoon pepper
Oil for frying
DIRECTIONS
Cut bass fillets into serving portions and place in a shallow
dish. Pour lemon over fillets and let stand about one. Leave
in fridge, turning once.
Stir together ingredients.
Coat fish with flour mixture.
Fry in hot oil at 350 until lightly brown on both sides,
5-8 min.
If all purpose flour is used, add 1 teaspoon salt.
