Tea Cake
It's an Irish recipe, so no doubt it'll be popular.
INGREDIENTS & DIRECTIONS
Night before:
1/2 pint strong tea (no sugar or milk)
1 lb currants, raisins and golden raisins
Soak fruit in tea.
Next day just stir in all of:
8 oz demrara sugar (brown coffee sugar)
4 oz chopped walnuts (optional, I don't)
1 egg beaten w/ 2 tablespoon milk
1 lb self rising flour
Spoon into a well greased loaf tin.
Bake at 325 until golden brown and springy (about 1 hr).
Turn out of tin straight away.
When cool slice up like bread, butter the slices before eating.
