Glazed
Peach Pie
INGREDIENTS
1 9" unbaked pie shell
5 cup sliced fresh peaches
3/4 cup sugar
3 tablespoon flour
1/2 teaspoon nutmeg
1/4 teaspoon salt
1 teaspoon lemon juice
1/4 teaspoon almond extract
1/4 cup apricot preserves (in jar)
DIRECTIONS
Make pie shell with high fluted edge.
Refrigerate.
Heat oven to 425.
In large bowl toss together peaches, sugar, flour, nutmeg,
salt, lemon juice, almond extract.
Over bottom of shell arrange 2 circles of peach slices, all
pointing to center.
Top w 2 more layers of peach slices same way.
Bake pie 20 min.
Cover with foil and bake 20-25 min longer or until peaches
are fork tender.
In small saucepan, melt apricot preserves, then use to brush
over top of peaches.
Cool at room temp.
Serve pie cut into 8 wedges add ice cream.
