St. Paddy’s Day Green Mint Chocolate Chip Cookies

You don’t have to be Irish to enjoy the fun of St. Paddy’s Day Green Mint Chocolate Chip Cookies. These green-tinted chocolate chip cookies are a favorite old family recipe from my old family cookbook.

I’ve updated the recipe here to include Andes mints, which were first introduced in the 1950s. (Now you can use Crème de Menthe baking chips, which are a bit easier since no chopping is required.) Before that, this old family recipe for St. Paddy’s Day Green Mint Chocolate Chip Cookies called for chopped milk chocolate and peppermint extract, and were written on a recipe card tucked inside a recipe box.

St. Paddy’s Day Green Mint Chocolate Chip Cookies are great with cold milk, hot coffee, or a lovely cup of tea, or green beer, if need be.  They are a welcome hostess gift at any St. Patrick’s Day home gathering, office potluck or break room, or for sharing with neighbors.  Following is my old family recipe:

St. Paddy’s Day Green Mint Chocolate Chip Cookies

1 10-ounce package Andes Crème de Menthe baking chips (or 1-1/4 cups Andes Crème de Menthe candies, chopped)
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
¾ cup dark brown sugar
½ cup granulated white sugar
1/2 cup chopped nuts
1/2 cup salted butter, softened
1 teaspoon vanilla extract
2 eggs
Green food coloring

If mint baking chips are not available, chop unwrapped Andes mints into small squares (about the size of a chocolate morsel). In a large bowl, combine mint baking chips/chopped candies, flour, baking soda, baking powder, salt, sugars, and nuts. Mix well until all ingredients are distributed evenly.

In a small bowl whisk the eggs and vanilla together, and add green food coloring to your own preference. Add softened butter and egg mixture to dry ingredients and stir with spoon until well blended. Drop by 1-ounce scoopfuls (or by rounded tablespoons) onto non-stick cookie sheets. Flatten balls slightly. Bake in 350°-375° F oven for 8-10 minutes. Allow to cool a few minutes before removing from cookie sheets. Makes about 4 dozen cookies.

Needless to say (but I’ll say it anyway), St. Paddy’s Day Green Mint Chocolate Chip Cookies make a great counterpoint to that traditional American Irish dinner of corned beef and cabbage. Served with good vanilla ice cream, and there is no better dessert this side of Ireland.  Bet your sweet leprechaun.
