Lettuce Enjoy Peruvian Dipping Sauce

A dear friend who lived in Peru for many years recently shared this condiment recipe for her Peruvian dipping sauce that is very delicious on just about anything. For that summer get together or family reunion that needs something a little different, try this Peruvian dipping sauce recipe:

Peruvian Dipping Sauce

1 head iceberg or romaine lettuce
2 fresh jalapeno peppers
10 springs cilantro leaves
4 chopped green onions or ½ chopped onion
1 teaspoon garlic powder or ½ teaspoon minced fresh garlic
1 cup bread crumbs
1/2 cup mayonnaise
2 tablespoons Parmesan or Mexican cotija cheese
1 tablespoon fresh lime juice
1 tablespoon olive oil
Salt to taste

Wash and drain the lettuce. Roast the jalapenos over a gas flame and peel. Chop coarsely. Pull apart the drained lettuce and add a few leaves of lettuce to a blender or large food processor, along with the chopped jalapenos. Blend Peruvian dipping sauce until everything is a smooth mixture. Add more lettuce, cilantro, onions, garlic, and the mayonnaise. Blend again until smooth. Add the bread crumbs, cheese, lime juice, oil and salt. Blend again until mixture is smooth but still thin enough to pour. You can add more mayonnaise or other ingredients to taste. Store in refrigerator and serve Peruvian dipping sauce in a plastic squeeze dispenser bottle.

As I understand it, in Peru this Peruvian dipping sauce is made with aji peppers, a very hot chili much like jalapeno. And there are some other indigenous ingredients in Peru that are not readily available here in the states that would make this Peruvian dipping sauce “authentic.”  Using my friend’s recipe is a reasonable facsimile, and it is most enjoyable to the taste buds.

Lovely, lovely on chips, crudités, broiled or barbecued meats, vegetables, rice, bread, you name it. In fact, in Peru, this Peruvian dipping sauce is enjoyed most heartily as a dip eaten with a unique combination of potato strips and hot dogs strips fried in hot oil together (called salchipapa).

This recipe for Peruvian dipping sauce would be a perfect addition to your “Sauce” section in your family cookbook or recipe box. Try it and you might like it.

Happy Cookbooking,

Erin
