Superbowl Supper of Soups & Sandwiches Keep Game Day a Winner

Wow, Superbowl 43, here we come!
When the Arizona Cardinals and Pittsburgh Steelers meet at Raymond James Stadium for the Superbowl in Tampa, Florida on Sunday, February 1, you can bet your sweet bippie there will be plenty of fans at home wearing Red & White or Black & Gold jerseys to cheer their favorite Superbowl team to victory.  (I put the details in here so those of you who haven’t a clue who is playing can at least know the basics.)

With more attention focused on the Superbowl scoreboard and the Superbowl commercials, there’s really no need to stress out over elaborate and expensive Superbowl food for friends, family, or party guests. Dig out those family recipes (from your family recipe cookbook, of course) and find some comfort foods that are easy and kind to your budget. (I have visions of melted Velveeta and diced Spam surfacing, but let’s be more optimistic that your family cookbook has some different and clever options.)

Around my house, instead of hot dogs, hamburgers or pizza, we plan to serve some hearty soups and sandwiches along with sliced vegetables and a homemade blue cheese dip.  Here are 2 easy Superbowl Soups and 2 easy Superbowl Sandwiches that will be on my Superbowl Supper table:

2 EASY SUPERBOWL SOUPS
Serve in mugs with spoons for easier eating.

Potato Sausage Superbowl Soup
You can’t lose with a simple potato and sausage combination. Slice a pound of kielbasa or any smoked sausage into coin sized slices and sauté until slightly brown. Add chopped onion and several cloves of crushed garlic, and stir-fry with sausage until onions are soft.
Dilute a packet of Lipton beef and onion soup mix in one quart water and add to sautéed mixture. Peel and coarsely chop one Russet potato per person and toss into soup pot. Cook until potatoes fall apart. Break up/mash up the potatoes to thicken the broth. Add a dollop of sour cream for an Eastern European flavor. Garnish with caraway seed. This will make enough for 8-10 people and you may have leftovers.

Hearty Seafood Superbowl Gumbo
Sauté chopped onion, green peppers, and celery (about 1 cup of each) in a few Tablespoons of butter and add to a pot of Swanson chicken broth (large can). Add 3 to 4 cans of diced tomatoes (with juice). Stir in one pound tiny frozen cocktail shrimp (rinsed), a pound of canned lump crabmeat, one 8 oz. can oysters, chopped, and one pound of any fresh or frozen whitefish, diced. Simmer for 30 minutes.  Measure all the seasonings: 1 teaspoon each, or to taste, of garlic powder, cumin, crushed red pepper, ground oregano, basil, thyme, and filé powder (aka sassafras; it ain’t gumbo without filé). Stir seasonings into ½ cup flour and sprinkle into broth, stirring carefully to avoid lumps and to thicken the browth a bit. Let flavors blend and bubble together for another 30 minutes or so. Serve over hot cooked rice, or mix rice in with gumbo and eat with spoon from the mug. Feeds 8-10 with good portions and maybe some leftovers.

 

2 EASY SUPERBOWL SANDWICHES
A few potato chips or potato salad and you have a perfect Superbowl Supper.

Tailgate Tri-Tip Rolls
Buy a 3-4 pound beef tri-tip, pat your favorite barbecue seasonings all over and roast in the oven at 400 degrees for an hour. You’ll have rare-to-medium-rare slices for those nice soft half-size French rolls found in most supermarkets. Have Superbowl guests self-slice and pile on the beef to their heart’s content.  A spread of creamed horseradish mixed with Dijon is nice with this small sandwich. Figure 3-4 thin slices per person and buy tri-tip accordingly.

Chicken Vegetable Toast
This is so easy it shouldn’t be called cooking. Slice boneless chicken breasts in half (or even thirds if they are huge) to make uniform fillet slices. Season chicken with your favorite salt blend and broil the slices about four minutes each side until they are slightly charred. Set aside on platter. Slice crusty baguettes (or use French rolls) to the size of the breast fillets, and toast in toaster oven to a golden brown.  Spread store-bought spinach and artichoke dip on the toast and top with a broiled chicken slice and a nice thin slice of Swiss cheese (and thin slice of fresh tomato, if available). Zap the open face sandwich in the microwave a few seconds to wither the cheese. Yum.

 

With these four Superbowl soup and sandwich ideas you really don’t need much else to get into the spirit of the Superbowl. Depending on the number of mouths to feed, you can easily get by with just one of each soup or sandwich. As always, easy Superbowl desserts might include brownies, cookies, ice cream or cupcakes.

Also, with this easy Superbowl menu, you can concentrate on adding new recipes to your family cookbook with your cookbook software during the actual Superbowl game, and then really pay attention during the Superbowl commercials and fourth quarter. At $6 million a minute this year, the commercials had better be good!
